to turn on AssistiveTouch go to your iPhone Settings > Accessibility > Touch > AssistiveTouch
turn on “Assistive Touch”, turn off “Always show menu”, turn on “Perform Touch Gestures” and set “Tracking Sensitivity" to minimum for Air-Touch.
To turn it off simply toggle off the AssistiveTouch option.
You can also do this quickly by adding Assistivetouch to your iPhone's control center, and then turning it on and off through there.
To add it to your control center go to your iPhone Settings > Control Center
Tap on Accessibility Shortcuts
Then, go to Settings >Accessibility > Accessibility Shortcuts > click AssistiveTouch.
To edit your pointer control, click on Settings > Accessibility > Pointer Control.
Choose the pointer color as you like, and set “Pointer Size” to maximum.
